8 years ago, 100 yards off the highwater mark in the sea, stood an abandoned fisherman’s outpost on a rock, off the small village of Michamvi, Zanzibar.
And we had a dream to create a world class eating experience of international standard in food quality, presentation, and of course taste.
There were 3 significant challenges needing to be overcome:
- The first was ensuring that the leaders and citizens of the village would give us permission to use ‘their ‘rock’.
- The second was ‘how do we have as small an impact on the natural beauty of the beach, the panorama and the natural setting, but at the same time create an international standard restaurant experience that would complement the setting’?
- And the third was ‘such a small space, in the sea, no fresh water, no electricity, high tide, low tide, maximise customer comfort and operate to international standards. How to do this?’
